Authentic Himachali Food
Discover centuries-old recipes cooked in heavy brass pots, rich yogurt-based gravies, steamed fermented superfoods, and sweet saffron treats.
Himachali Dham
The crown jewel of Himachali culinary heritage. Prepared exclusively by hereditary master chefs called 'Botis' in heavy brass pots (charotis) over wood fires. A multi-course vegetarian feast served on dried leaf plates (pattal) without onion, garlic, or tomatoes, highlighting rich yoghurt gravies, whole spices, and slow cooking.
Siddu with Desi Ghee
A traditional fermented steamed wheat bread stuffed with a rich, spiced mixture of crushed walnuts, poppy seeds (khus-khus), roasted paneer, green chillies, and mountain herbs. Served piping hot split open and drenched in copious amounts of melted pure cow ghee and tangy walnut chutney.
Chamba Chana Madra
A decadent, slow-cooked chickpea curry prepared in a luscious yoghurt-based gravy infused with whole cardamoms, cinnamon, cloves, cumin, raisins, and dry coconut slivers. The signature first dish served in every Kangri and Chambyali Dham.
Chha Gosht
A legendary Himachali delicacy of tender marinated lamb slow-cooked in a tangy spiced buttermilk (chaas) and gram flour gravy, tempered with asafoetida, ginger, bay leaves, and crushed red mountain chillies.
Tudkiya Bhath
An authentic one-pot Pahadi rice dish cooked with local lentils, potatoes, onions, tomatoes, and a special blend of roasted mountain spices, garlic, ginger, and a dash of lemon juice. Often served with fresh homemade mint curd.
Babru
The Himachali version of kachori or stuffed puri. Made with kneaded wheat flour stuffed with a spiced black gram (urad dal) paste that has been soaked and ground overnight, then deep-fried to a golden crispy finish. Best paired with tamarind chutney or Chana Madra.
Himachali Mittha
The sweet grand finale of Himachali Dham. Sweetened saffron rice cooked with desi ghee, dry fruits (raisins, cashews, almonds), roasted coconut chips, and aromatic green cardamom.
