Himachali cuisine is hearty mountain food — slow-cooked in ghee and yogurt, shaped by cold climates and festival traditions. From the elaborate Kangri Dham served on leaf plates to roadside Siddu stalls, every district adds its own flavour.
Dishes you cannot miss
- Kangri / Mandiyali Dham — Multi-course vegetarian feast (rice, rajma, madra, khatta, meetha).
- Siddu — Steamed wheat bread stuffed with poppy seed or walnut paste; iconic Kullu snack.
- Chana Madra — Chickpeas in yogurt gravy; Chamba & Kangra classic.
- Chha Gosht — Mutton slow-cooked in buttermilk and spices.
- Babru — Deep-fried black gram stuffed puri, popular in Shimla belt.
- Trout — Fresh river fish from Tirthan, Barot, and Kullu streams.
- Aktori — Buckwheat pancake from Lahaul-Spiti region.
- Mittha — Sweet rice with dry fruits, often ends a Dham meal.
Where to eat
Look for Dham during local festivals and weddings in Kangra and Mandi. Siddu is best at dhabas on Kullu-Manali highway and Old Manali lanes. For trout, book homestays in Tirthan or Gushaini that serve catch-of-the-day meals.
